We choose our best wheels of traditional raclette and continue maturing them in our cellar for a total of 8-12 months to develop maximum flavor. The additional time spent aging makes this cheese distinct from its mild counterpart giving it a more firm body, resulting in an ideal sliced cheese for your next charcuterie board!
