Our Raclette and Fromage blanc are being served in many restaurants throughout Northern Michigan and beyond. Our specialty Raclette (Sharp, Rosemary, Green peppercorn and minie wheels) are only available in our cheese shop in Suttons Bay. The Raclette and Fromage blanc are sold in many grocery stores and gourmet markets, throughout Northern Michigan. The cheese will keep well (several weeks), if wrapped properly and kept cold. Although you should serve the cheese at room temperature, you should store it refrigerated. Mold on cheese is normal especially on natural cheese; it is better to get a little mold and just scrape it off, than freezing the cheese. You should double wrap the Raclette with waxed paper and aluminum foil, nice and tight, making sure no air is getting to the cheese. Air will spoil the cheese either by drying it out or allowing mold to grow on it. Also when cutting into a chunk, use a clean knife and on a clean board. If the cheese should dry out after some time, you can use it for grating. Our Raclette is made to be eaten fresh, the flavor will not improve in your refrigerator. Enjoy and just say Cheese!
La Tarte Flambe
4 oz. Fromage Blanc
6 oz. pizza dough
½ oz.flour
1 ½ teaspoon salt
2 teaspoons canola oil
3 oz. chopped onions
3 oz. bacon, cubed
2 oz. sour cream
Preheat oven to 400 ͦ. Press pizza dough into buttered pie dish or pizza pan. Insperate bowl, mix cheese, sour cream, flour and oil into creamy mixture. Spread mixture on dough with wooden spatula. Sprinkle with onions and bacon. Cook for 15 min. or until golden brown.
